OK, so now that we have a good pie crust recipe, we can do other things with the dough. One of my favorite things is to make little pie crust crackers. These are just pie crust dough rolled out and cut into shapes. I like to use the smallest cutter from my fluted square cookie cutter set (the set I use for my graham crackers).
These little crackers are super easy to make. Just follow the directions for pie crust dough, and after you roll out the dough, cut it into little shapes.
You can also use the leftover scraps from making a pie for these, as well. Put the cut shapes on an ungreased cookie sheet, brush the tops with a little beaten egg and sprinkle with granulated sugar.
Bake at 425 degrees F for about 8-10 minutes (watch them–you don’t want them to burn). And voila! You’ve got delicate, flaky, and yummy crackers. They are just slightly sweet. They go really well with an afternoon cup of tea.
